My latest favorite superfood!

A lot of people worry about getting enough nutrients on a plant based diet. The reality is , as long as you are focusing your meals on whole plant foods — not processed foods — and you are making sure to get vegetables, greens, legumes, nuts and seeds, and you are feeling full. It’s unlikely you will develop any problems.

Greens are probably the food that we often think about last because when you are really hungry they don’t really appear at the top of the mind, in those moments we go for high caloric foods. But greens have amazing nutrition, they are high in vitamin c and a , and have good amounts of b vitamins, magnesium , calcium and iron. I like to target for 2 bundles of greens a day although I rarely hit this target but when I have the time I like to juice or make a big salad or stir-fry a head of cabbage with sesame oil and garlic! One of my favorites.

My new favorite superfood I’ve discovered — that’s actually quite ordinary and you can get it almost anywhere is wheat germ. I’ve recently gotten into using wheat germ to make cakes and breads. I’ve started making this thing for breakfast where its basically like a pizza dough bread and pile on whatever — for example — stir- fried cabbage and tofu :) ✨✨ Forget whole wheat flour I have replaced everything with wheat germ.

I found out that 1 cup of wheat germ has all our daily requirements for zinc, manganese and selenium, about half our daily requirements for iron and copper, 70% daily req for magnesium , also a rich source for b vitamins and half the daily requirements for protein ! I realize that many people are doing what they can to avoid wheat products, but if you aren’t raw and you have no allergies to the stuff, it’s worth trying :) I only think it’s a bit weird that it hasn’t been talked about more. Sometimes I feel that when foods are so rich of nutrients and happen to be plant based , there is a lot of suppression of information and also disinformation.

For example soy products. I don’t want to get into the kinds of information that is spread online about it , but it’s also an amazing food rich in calcium, iron and protein. And in Japan , people eat it multiple times a day and the people are beautiful , with glowing skin , okay big generalization — but when I visited I literally could not stop staring at how beautiful every person's skin was. I wouldn’t have otherwise attributed soy consumption to this, but while I was there I finally asked a friend who is Japanese about their skin and how it’s so flawless she claimed it was the tofu, the soy products.

And while we were there, we were also eating soy products 3 times a day essentially. Soy, rice, seaweed and fresh salad, this seemed to be the most available food everywhere we went.

So anyway , take information lightly always , do your own research and test it on your body. There’s a lot of misinformation unfortunately about food and specifically plant based diets to keep people in fear mentalities about trying something new and avoiding meat and dairy. We are taught that meat is protein and iron and dairy is protein and calcium, yet so many plant sources offer way more nutrients than this without the added cholesterol and environmental impacts.
